How to Get a Booth During NIOSA

A Night in Old San Antonio (NIOSA) is a four-day event that takes place during the middle of the ten-day-long Fiesta San Antonio, the city's biggest festival. A music and food event, NIOSA is sponsored by the San Antonio Conservation Society and is dedicated to reliving and replicating the foods and music of early San Antonio. Booths are based around 15 different ethnic categories that contributed to the evolution of San Antonio as a distinct cultural place, including Irish, Native American and African American communities.

      Come up with a specific ethnic dish that you would like to feature at a NIOSA food booth. Make sure the dish is related to an ethnic group that played a part in the history of San Antonio through immigration, colonization or other factors. Make sure you are going to prepare an authentic version of that dish.

      Look at the map of NIOSA to determine in which camp your booth would be placed, depending on the food served. Mexican food goes in the Mexican Market, Chinese in Chinatown, Barbecue in Frontier Town and a wide variety of European favorites go in the International Alley.

      Cook up a sample of your dish to be tested by the ladies of the San Antonio Conservation Society. All vendors must be pre-approved by the ladies, who will come by to taste and test the food during a private showing. Contact the San Antonio Conservation Society directly to invite the ladies to private tasting and showing of your ethnic food contribution.

      If your dish has been approved by the ladies, contact the business manager of NIOSA to figure out where your booth will be located within the NIOSA event. Keep in mind that although your food and recipe will be featured at NIOSA, you will not actually be staffing the booth. All staffing is done by the San Antonio Conservation Society.
