How do you make chai?

To make classic Indian chai, you'll need:

- Chai masala blend

- Loose-leaf black tea

- Freshly grated ginger

- Cardamom pods (or powdered cardamom)

- Cinnamon stick (or powdered cinnamon)

- Cloves (or powdered cloves)

- Black peppercorn (or powdered black pepper)

- Milk (dairy or non-dairy)

- Sugar (optional, to taste)

Instructions:

1. Bring water to a boil in a saucepan or kettle.

2. In a separate small pan or teapot, combine the chai masala blend, black tea, grated ginger, cardamom, cinnamon, cloves, and black pepper. Toast over medium heat for a minute or two, stirring occasionally, to release their aromas.

3. Add the toasted spice mixture to the boiling water and let it simmer for 5-10 minutes. (For a stronger chai, simmer longer).

4. Strain the chai into a serving cup.

5. Add your choice of milk (dairy or non-dairy). You can use 1:1 ratio of milk and water or adjust to your preference.

6. Add sugar, if desired, and stir well to dissolve.

7. Enjoy your hot, aromatic chai!
