- For Dosa Batter
- 1 cup rice
- 1/2 cup urad dal (black gram)
- 1/4 teaspoon fenugreek seeds
- 1/2 teaspoon salt
- For Masala Potatoes Filling
- 2 large potatoes, boiled, peeled, and cubed
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon mustard seeds
- 2 green chilies, chopped
- 1 teaspoon ginger, finely chopped
- 2 cloves garlic, finely chopped
- 1 onion, finely chopped
- 1/4 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Oil for frying
Instructions:
- To make Dosa Batter:
1. Rinse rice and urad dal separately and soak them in enough water for about 4-6 hours.
2. Drain the soaked rice and urad dal, then grind them separately into smooth batters.
3. Mix the rice batter and urad dal batter together in a large bowl. Add fenugreek seeds, salt, and mix well.
4. Cover the batter and keep it in a warm place for about 8 hours or overnight to ferment.
- To prepare Masala Potatoes Filling:
1. Heat a pan with some oil over medium heat.
2. Once the oil is hot, add cumin seeds and mustard seeds.
3. Allow them to splutter for a few seconds.
4. Add chopped green chilies, ginger, garlic, and onion. Sauté until onions turn translucent.
5. Add boiled potatoes, red chili powder, turmeric powder, coriander powder, and garam masala.
6. Cook for 5-7 minutes until potatoes are well-coated with spices.
7. Add salt to taste.
- To make Masala Dosa:
1. Heat a flat pan or griddle on medium heat.
2. Pour a ladleful of the dosa batter onto the pan, spreading it out in a thin circular motion to form a round dosa.
3. Once the edges of the dosa start to leave the pan, drizzle some oil around the sides and in the center of the dosa.
4. Cook for about 2 minutes or until the dosa turns golden brown and crispy on one side.
5. Flip the dosa and cook the other side for about a minute until golden brown.
6. Spread some of the Masala Potatoes filling over one half of the dosa.
7. Fold the dosa in half and serve hot with coconut chutney and sambar.
