1. Snowball Pudding:
Ingredients:
- 1 pint of milk
- 4 eggs
- 2 teaspoons of vanilla extract
- 1 cup of sugar
- 1/2 teaspoon of salt
- 1 tablespoon of butter, melted
Instructions:
-Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
-Whisk together the eggs, vanilla, sugar, and salt in a medium-sized bowl.
-In a separate saucepan, bring the milk to simmer over medium heat, then whisk into the egg mixture.
-Pour the custard mixture into a 9x13 inch baking dish and set it in a larger pan filled with about an inch of hot water (for a water bath).
-Drizzle the melted butter on top of the custard.
-Bake in the preheated oven for 40-45 minutes or until a knife inserted in the center comes out clean.
-Let the pudding cool before serving, then chill it thoroughly for at least 2 hours.
-Serve with fresh fruit or whipped cream.
2. Plum Pudding:
Ingredients:
- 2 cups of all-purpose flour
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground cloves
- 1 cup of chopped suet
- 1 cup of dried currants
- 1 cup of raisins
- 1/2 cup of chopped dried apricots
- 1/2 cup of chopped dried cherries
- 1 cup of milk
- 2 beaten eggs
Instructions:
-Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
-Grease a 9x13 inch baking dish.
-Mix the flour, baking soda, salt, cinnamon, nutmeg, and cloves together in a large bowl.
-Stir in the chopped suet, currants, raisins, dried apricots, and dried cherries.
-In a separate bowl, whisk together the milk and eggs.
-Add the wet ingredients to the dry ingredients and mix well.
-Pour the mixture into the greased baking dish and bake in the preheated oven for 45-50 minutes, until a toothpick inserted in the center comes out clean.
-Serve with brandy sauce or custard.
3. Pound Cake:
Ingredients:
- 1 pound (4 sticks) of butter, softened
- 1 1/2 cups of granulated sugar
- 8 eggs
- 3 1/4 cups of all-purpose flour
- 1 1/2 teaspoons of baking powder
- 1/4 teaspoon of salt
- 1/4 cup of milk
Instructions:
-Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius).
-Grease and flour a 9x5 inch loaf pan.
-Cream together the butter and granulated sugar until light and fluffy.
-Add the eggs one at a time, beating well after each.
-Mix together the flour, baking powder, and salt. Alternately add the dry ingredients and the milk to the creamed mixture, beginning and ending with dry ingredients.
-Pour the batter into the prepared loaf pan and bake in the preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean.
-Cool the pound cake in the pan for 15 minutes before turning it out onto a wire rack to cool completely.
-Before serving, decorate with powdered sugar, fruit, or whipped cream.
