What were the targets called that squires hit for practice?

The targets that squires hit for practice were called "quintains".

A quintain was a wooden post with a target at one end and a swinging arm at the other. The squire would ride towards the target, aiming to strike it with his lance. If he was successful, the swinging arm would swing forward, attempting to strike him. This tested both the squire's accuracy and his skill at avoiding obstacles.

There were other types of targets used for practice, but the quintain was the most famous.
