Do you say Canon or Pachelbel Canon?

The correct name for the famous piece of music is Pachelbel's Canon in D major.

Johann Pachelbel was a German composer and organist of the Baroque era. He is best known for his Canon and Gigue in D major for three violins and basso continuo. The piece is often mistakenly called simply "Canon in D" or "Canon by Pachelbel".
