What are fiddleheads?
Fiddleheads are the tightly coiled fronds of young ferns, specifically those of the ostrich fern (Matteuccia struthiopteris) and the lady fern (Athyrium filix-femina). Fiddleheads are harvested in the spring when they are still tightly curled and have a delicate, sweet flavour with a slightly bitter aftertaste.
