Ingredients:

* 1 large onion, chopped

* 1 tsp salt (or to taste)

* 1/2 tsp ground black pepper

* 1 tbsp vegetable oil

* 2-3 eggs (optional)

* 4-6 tbsp palm oil (or vegetable oil)

Instructions:

1. Prepare the beans: Rinse the beans thoroughly and soak them in water for at least 4 hours, or overnight.

2. Cook the beans: Drain the soaked beans and add them to a pot with enough water to cover them. Bring the water to a boil, then reduce the heat and simmer for about 1 hour, or until the beans are soft.

3. Make the moi moi mix: While the beans are cooking, prepare the moi moi mix. In a blender or food processor, combine the cooked beans, onion, peppers, garlic, thyme, salt, and pepper. Blend until smooth. You may need to add a little water to aid the blending process.
