This recipe yields a flavorful and satisfying breakfast or snack.
Ingredients:
* 1 cup poha (flattened rice flakes)
* 1 medium onion, finely chopped
* 1/2 teaspoon turmeric powder
* 1/2 teaspoon red chili powder (adjust to taste)
* 1/4 teaspoon mustard seeds
* 1/4 teaspoon cumin seeds
* 1/4 teaspoon curry leaves
* 1 tablespoon chopped cilantro
* 1 tablespoon vegetable oil
* Salt to taste
* Lemon juice (optional)
Instructions:
1. Prepare the poha: Rinse the poha under cold water and drain well.
2. Soak the poha: Soak the poha in water for about 5-10 minutes, or until it becomes soft and pliable. Drain any excess water.
3. Heat the oil: Heat the oil in a non-stick pan over medium heat.
4. Spices and onions: Add mustard seeds, cumin seeds, and curry leaves to the hot oil. Let them splutter. Then, add the chopped onions and cook until they turn translucent.
5. Add spices: Add turmeric powder and red chili powder. Saute for a minute.
6. Combine with poha: Add the soaked poha to the pan. Stir well and cook for about 2-3 minutes, until the poha is heated through and the onions are soft.
7. Season and serve: Season with salt to taste. Garnish with chopped cilantro and a squeeze of lemon juice (optional). Serve hot.
Tips:
* For a spicier flavor: Increase the amount of red chili powder.
* For a sweeter taste: Add a pinch of sugar or jaggery.
* To make it a one-pot meal: Add chopped vegetables like potatoes, peas, or carrots while cooking the onions.
* For a lighter version: Use less oil and cook the poha with only the spices and onions.
