The exposition in "Distillation" introduces the process through which tequila and mezcal are distilled in Mexico at distilleries. Each distilleries has their approach with their process depending on if mezcal of tequila is being produced, but most distillation plants feature 4 elements used throughout the distillation process; a large oven made from lava rock called a horno, a fermentation vat containing water and agave juices known as tinas used by fermenting yeast, large stills named pot stills, and glass bottles for the alcoholic beverages to rest at least for months up to several years.
