You can't find Gabite in Pokémon Sun and Moon. Gabite is a Generation IV Pokémon and thus doesn't appear in the Alola region.
To get Gabite, you'll need to trade with someone who has one from a game where it is available (like Pokémon Diamond, Pearl, Platinum, Black, White, Black 2, or White 2).
